Sarah Kamrath's Sugar Free Recipes

These sugar free recipes are both delicious and nutritional—the perfect solution to your child's sweet tooth.

Carrot Cake Muffins

2 1/3 cup spelt flour
2 cups shredded carrots
1 1/2 cups mashed bananas
1 cup applesauce
1/3 cup canola oil
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon nutmeg
1/2 teaspoon sea salt
2 tablespoons honey
2 tablespoons molasses
2 teaspoons vanilla flavor
1/3 cup raisins
1/2 cup pumpkin seeds

Mix wet ingredients with dry.

Bake @ 375 for 40-45 min.

Chewy Oatmeal "Cookies"

2 1/2 cups rolled oats - spread on cookie sheet and bake for 8 min @ 375
1 1/2 cup pecans
1/2 cup walnuts
1 2/3 cup spelt flour
¼ cup oat bran (optional)
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon sea salt
1/2 cup Earth Balance
1 cup mashed banana
1 teaspoon vanilla
1/2 cup maple syrup
1 cup applesauce
2/3 cup raisins

Mixed cooked oats with other dry ingredients and mix wet ingredients; combine and shape into cookies and bake @ 375 for 15-20 min.


Sweet Potato Spread

2 sweet potatoes or yams
1/2 cup applesauce
Pinch of cinnamon

Bake sweet potatoes at 400 for 1 hour. Scoop out insides. Mash with fork or blender. Mix with applesauce and cinnamon. Spread on whole grain toast.


Beet Chips

Beets, already cooked
Olive oil
Salt

Cut beets into thin slices. Brush with olive oil and sprinkle with salt. Place on oiled cookie sheet. Cook for 30-40 min. @ 300


Banana Popsicles

1 Banana
Plain yogurt
Granola

Cut banana in half. Stick popsicle stick in end. Coat with yogurt. Sprinkle on granola. Place in freezer.
