Oats & Apples Breakfast Bars

These moist, yummy bars are wonderful for quick, no time for breakfast, mornings.

Ingredients:
3 cups rolled oats
1 1/2 cups of coconut
1 1/2 cups of raisins or chopped dates
1 cup chocolate chips (optional)
3 medium apples, chopped small
2 - 3 cups soy, almond, or rice milk
1 1/2 cups chopped nuts
2 tsp powdered cinnamon
1/2 tsp powdered ginger

Mix the spices together and set aside.

Lightly oil or butter a 13" x 9" baking dish, and layer the ingredients as follows:

Layer 1:
1/2 of the nuts
1/3 of the coconut
1/3 of the oats

Layer 2:
1/2 of the raisins
1/3 of the coconut
1/3 of the oats
1/2 of the chocolate chips, if desired
all of the chopped apples

Sprinkle half the spices over these two layers and then pour 1 1/2 cups of milk over the top.

Layer 3:
Remaining raisins, oats, coconut, chips,

Top with remaining spices and nuts and pour the remaining 1 1/2 cups of milk over the top.

Bake at 350 degrees for 30 minutes.

Bars may be made ahead of time and frozen for busy mama mornings. Enjoy!
