Laura's Yummy High-Protein Oatmeal

Plain old oatmeal gets kicked up a few notches in both flavor and nutritional quota.

  • 1/3 cup rolled oats (not instant)
  • dash cinnamon
  • dash salt (optional)
  • 2 tablespoons walnut pieces
  • 2 tablespoons raisins
  • 1/2 apple, cubed
  • 2/3 cup water
  • 1/3 cup cottage cheese
  • 1 teaspoon honey

Mix all ingredients except cottage cheese and honey. Bring to a boil, reduce to simmer, and cook for five minutes or till desired consistency, stirring occasionally.

Stir in cottage cheese and honey.

Serves one.

I really like this with a cup of tea—don't know what else you would need with it, nutritionally!
