Confetti Winter Vegetable Medley



Pan Apple Pancakes
There are few things more evocative of winter than the smell of maple syrup and pancakes. Try this apple variation to make warm, wintery memories.


various potatoes

1 pound purple potatoes

1 pound rutabagas

1 pound parsnips

1 pound yams

Olive oil

Preheat oven to 350°F.

Peel potatoes, rutabagas, parsnips, and yams. Cut in 1/2-inch cubes, or in long strips about 1/2-inch thick, like "Greek fries." Coat lightly with olive oil and spread on oiled cookie sheet, one layer deep. Bake until done (20-30 minutes).
