Thrifty Thursday: Pantry Meals

What are your top go-to pantry meals? (A pantry meal is something you make up out of what’s sitting around in your pantry, freezer, fridge–when you are about due to go food shopping but want to put it off for one more day–or you’re broke (me, today, actually)–or you just want to USE the food that you already have. Kind of a “love the one you’re with” philosophy, applied to food.

I asked around…and here are some great leads. I hope they inspire. I always want more inspiration, so please share YOUR favorite pantry meals in a comment below.

Meagan Francis of The Happiest Mom blog said: “My kids love when I serve up black beans, rice, corn, salsa and some shredded cheese and a tortilla. They can mix it all together, make a taco out of it or eat it separately (and they all prefer it different ways.) We eat a pork tenderloin about once every other week and I always make pork-fried rice the next day, which they also love. Easy-I use brown rice, a little scrambled egg and peas, and some soy sauce.”

My friend from high school, Adrienne Cassara Gieszl, likes keeping cans of white clams in the pantry, so that she can whip together pasta and white clam sauce. Yes, we grew up near the ocean. Sigh, I miss it (and fresh seafood).

My OTHER friend from high school, Maggie Odell, who is a freelance chef, caterer and food stylist, shared, “I make quinoa like it’s risotto, with frozen peas or white corn & tons of parmesan and butter!” (I bet that would also be so good with farro as the grain.) Sounds like a yummy way to use up cartons of broth or frozen stock, onions, and frozen veggies.

Kimberly Bepler’s blog ABCDoula has lots of crock pot recipes, which lend themselves to pantry meals. But the one that jumped out at me was Lettuce Wraps. My partner, Laura, loves the kind from PF Chang’s, but I’d much rather make a cheaper, healthier version at home.

And from multitasking mama Beth Hogan: “From my one-armed meals for two collection (kid-friendly, husband at firehouse and nursing baby): boil frozen cheese ravioli and frozen lima beans, saute frozen spinach, frozen cube of Traden Joe’s garlic in olive oil and one or two cups broth. Drain pasta and beans, then dump into pan. Shave carrots into mix with peeler. Serve with fresh parmesan.” Yum! Lots of fiber and veggies up in there.

Speaking of frozen cubes from Trader Joe’s, I am very dependent on Trader Joe’s frozen basil cubes. Last night I made pesto with them, plus 1 cube of garlic, a tomato, lemon juice, parmesan, and pignoli nuts. I served it with vegetable pasta shells. My son loves pesto, as does my partner. And my daughter, who does not, had the shells with melted cheese, with romaine lettuce on the side.

On the vegan front, mama and solo performance coach Tanya R. Taylor of Project Life Stories recommends “Rice noodles in mushroom broth….a little fried tofu and whatever veggies are in the fridge sauteed and added on top.”

If you’re anything like me, you have about 5 pounds of lentils in your pantry. I do! Green, orange, brown, you name it. Toddy Eardley, who blogs at Credit Crunch Kitchen, proposed dal and chapatis, which would be brilliant. If you have some ground meat or TVP around, try her mouthwatering Comfort Keema Pulao.

Snoa Lingerie: “Sexy and Warm at the Same Time”

Before we all get spring fever and start sleeping in the nude, let me sing the praises of Snoa Lingerie.

Of course some of you probably sleep in the nude all year round…but I’m just not one of them. Even on the hottest nights of the year, I prefer a little something. A nightie,  a t-shirt. Otherwise I catch a chill. And when I have a chill, I cannot sleep.

I love innovations like these: someone thought, “Hey, I need warm pajamas, but I’m tired of warm pajamas giving me the silhouette of  a flannel-wrapped yeti. I want to look like a warm, eco-friendly Bond girl!” Snoa Lingerie was launched to solve that very dilemma.

The shoulder straps are satin, and the nightie itself is made of two layers: on the inside, silk-modal. On the outside, thin wool jersey. They’re sexy and feminine, but not too-too if you have to jump out of bed and soothe one of your children. No need to scramble into something more “modest,” as my mother would say.

The line is a little pricey, but I highly recommend putting it on your Mother’s Day (or belated Valentine’s Day) wish list.

Blooming Tuesday: Q&A with mama and NBA star Marie Ferdinand-Harris

Pregnancy and motherhood can complicate a woman’s fitness practices. It can also be a time that women connect with their bodies most meaningfully. I “got” yoga when I was pregnant with my daughter. Prenatal yoga classes dramatically minimized my aches and pains and restless leg sensations, and gave me a new avenue to inner peace. In today’s blog post, NBA athlete Marie Ferdinand-Harris, of the Los Angeles Sparks, shares her experience of being both an athlete and a mother.

Candace: Many mothers feel like they want to nourish themselves after birth, but don’t know where to start. Can you describe your journey? Did you work with a dietician? What were your food decisions, and what was the timeline in terms of getting active?

Marie: Throughout my pregnancy I constantly watched what I ate. I drank a lot of water and carrot juice and ate fruits and vegetables at every meal. I did not work with a dietician, but I read many magazines to research how to eat in a healthy manner.

I worked out consistently during my entire pregnancy up until the last trimester. My workouts were not, by any means, extreme, just light cardio. I either walked, lightly jogged on the tredmill, or used the stairmaster, I also lifted with light dumbbells to attempt and keep my muscles active and toned. I feel that my exercise routines throughout my pregnancy enabled me to not be so far back and out of shape after I gave birth to my son CJ. After giving birth and getting an “ok” from the doctor to really work out hard, I focused a ton on abdominal strength because the ab muscles are the weakest muscles after having a baby.

I worked with a personal trainer to strengthen my ab muscles, and to lift weights and get my muscles back in shape. I went step by step, feeling stronger and more active, and eventually feeling strong enough to get on the basketball court and work on basketball skills in order to get back into basketball shape.

I believe that my conscious eating and exercise made my pregnancy much less difficult on me, and I felt pretty good throughout.

Candace: When did you know you were “back” in terms of your strength and energy?

Marie: About two months after I was doing sprints and suicides (a type of running drill) on the basketball court. Although I was not yet doing full contact five versus five basketball games, I was able to do light two on two basketball games with some contact. As I played more and more, my cardio and strength kept improving so I could push harder and harder.

Candace: How do you balance your career with motherhood?

Marie: The luxury of the sport of basketball for me as a mother is that I have at most two and a half to three hour practices every day, giving me the rest of the day to be the great mother that I aspire to be. The time constraints of basketball practice allows me to be the mother that I am and the professional athlete that I am. I try to rest up while CJ is at school or napping so that I have the energy to be a great, active mom with him when I am with him.

I would not be able to balance my career with motherhood as effectively as I am able to without my husband Cedric. Cedric is the most supportive husband, he takes a lot of pressure off me and allows me to compete throughout each WNBA season without being stressed by helping take care of CJ. While in season, I focus on making sure that I give my husband the right advice to help him help me take care of CJ.

From Chapter 10: Loss Can Make Better Parents

The most surprising relationship I’ve developed since my parents died, however, is the one I’ve cultivated with myself. For the longest time, I wanted to be rescued. I wanted my friends to care for me more than they did, and I expected my husband to anticipate my needs, even take my parents’ place. But he can’t. My friends aren’t my mom and Mark isn’t my dad and my parents are never going to fly back into my living room with their capes and magic rings and make everything better. What I’ve learned is that I can no longer go through life just being a mother, wife, writer, and homemaker. I need to take on one more additional role. I also need to be a parent to myself.

If Mark and I want to go out to dinner and see a movie, I stop feeling sorry for myself and call a babysitter. If I want to take the kids to an event my parents would have enjoyed but Mark has no interest in, I take Jake and Lexi and give Mark the afternoon off. And on Mother’s Day, I give myself permission to spend the day the way I want to. All of this represents a sea change in my thinking. I used to wake up Mother’s Day and hope Mark would surprise me with a gift certificate to get a massage or give me “permission” to skip Mother’s Day with his mom so I could take a class at the gym. I’d invariably get disappointed if he failed to read my mind, and start missing my parents even more. Surely they would have given Mark a friendly poke to treat his wife to a few hours of free time. Surely they would have coddled me the way I so desperately long to be coddled. But the truth is I don’t need to wait for anyone to treat me to anything. And I don’t think my parents would have wanted their daughter to rely solely on somebody else to take care of her needs, either. My parents, after all, taught me to be self-sufficient.

In the charming town of Arcata, nestled on the redwood coast of northern California, there is a bagel shop that has been pleasing teething babies and their moms for over a quarter of a century. New customers at Los Bagels often see the “Free Teething Bagels” sign and just have to ask…what is a teething bagel? Parents figure it out first.

The creative bakers at Los Bagels make a batch of their traditional (boiled then baked) bagels, except, they make the bagels extra small. After they cool down, the bagels are frozen, thus creating an ideal treat for a teething baby. The bagels numb the little ones’ gums, and since they are made from only five wholesome ingredients (flour, water, salt, malt and a pinch of yeast) this is a natural, preservative-free way to soothe your baby.

In any department store today, you will find plastic teething rings, designed to be put in the freezer. Made in industrial factories…do you really know what’s in this plastic your baby is gnawing on? Why not make a batch of “teething bagels” and freeze them to use when baby is getting fussy? Use organic ingredients to ensure your baby has a natural way to relieve those sore gums. Plain Bagels (for teething bagels)

Yield: 1 Dozen
1 ¾ cups lukewarm water
½ teaspoon dry yeast
2 teaspoons salt
1 ½ tablespoons dry malt (sugar may be substituted)
4-5 cups high-gluten flour*
*Bread flour may be substituted

Mix all ingredients except flour. Add flour and mix into a ball. Knead for 10-15 minutes, adding more flour if necessary. The dough should be stiff. Let dough rest 10 minutes, and then cut into 14-18 pieces with a sharp knife for teething bagels, 12 pieces for regular sized bagels.

Now roll each piece of dough on a table to form long cigar-like shapes. Then connect up the two ends by overlapping them about ¾ inch and rolling the ends together to connect the dough and make a ring shape. Make sure the joint is secure or it will come apart while boiling. Sometimes a bit of water on the two ends makes joining easier.

Cover with a damp towel and let rise 1-1 ½ hours in a warm spot. In a large pot of kettle bring 1-2 gallons of water to a rolling boil. Place bagels in boiling water and boil until they float (approx. 15-30 seconds). Remove with a slotted spoon and place on a lightly greased cookie sheet. Bake at 500 degrees for 10-15 minutes or until golden brown.

Yummy! Now I have a craving for a delicious bagel…or seven.

Woo Me Wednesday: Lingerie Meant for Mamas and More

Hi, Mamas. How do you do it? Have small kids and preserve your sex life with your partner? I have to say that sharing custody with my children’s dad has taken that question out of my reality for the last few years. But right now, he’s away for two months, and I’m the full-time parent, 24-7. I remember how hard it was to feel sexy, act on sexy feelings, or even tap into that energy when an interruption was very likely.

I honestly think that a regular sex life erodes the kinds of resentments and moments of fuming that can pile up when all you do is wrangle kids, dishes, laundry, groceries, meals, chores, bills, repeat.

A mama who “gets some” from her partner is way more prone to overlooking the nitpicky things that can otherwise trigger her. It’s such a source of joy and even grace.

So I don’t have all the answers, but I have a few. Getting in the mood if you’re not already there–how do you do it? Alisa Bowman’s book and website, Project Happily Ever After, has some good tips for that.

Being curious about your partner–and having your partner be curious about you–is sexy. Why? Because when you first met, you WERE curious about each other. And you knew so little about that person. Learning more about them gives you new things to appreciate, knocks them out of the familiar box for a few minutes. After years of being together, you might feel like you know all there is to know about that person…but there’s always more to learn. Recently, at dinnertime, my family has been using Family Talk, from www.aroundthetablegames.com, to break out of our conversational ruts.

One question we took turns answering was “If your family members were dogs, what kinds of dogs would they be?” I saw my daughter as a poodle, but she did not resonate with that. She saw herself as a chihuahua-dachsund mix. When it was my partner Laura’s turn to say what kind of dog I was, she said, “I just don’t think of you as a dog. You’re more of a Persian cat.” That made me feel good. When I was in middle school, we had to write essays from the point of view of animals. I wrote from the point of view of a Persian cat, and it was probably my very first piece of writing that I was truly proud of. It was sweet to be mirrored that way. I learned more about everyone at the table that night, which brought us closer together, felt connect-y.

I think I might have gotten off on a bit of a tangent, but my point was…that it’s good to continue to be curious, to ask questions about your partner, and vice versa, because it jolts you out of autopilot and helps you to see that person as an individual, not just a member of your family tribe.

Moving on to the more grownups-only portion of today’s blog…because we mamas need to honor that part of ourselves too.

It might be a cliché, but I really love wearing lingerie. It gets me there! So when you have a sitter, or the kids are at a playdate, consider slipping into something more comfortable.

Last but not least, it’s so good to move your body. Even if you can’t get to the gym, or away for a run, consider having a dance party in your house with your kids. I used to love to dance to Laurie Berkner’s Fruit Salad Salsa song. I just did a search on YouTube for Fruit Salad Salsa, and there are several home videos of wee ones dancing to that song, so I wasn’t the only one!

I’m off to Nia class–definitely a sexy yet gentle way to tap into your sensuality. Lots of hip rotations and even pelvic thrusts going on over there…it’s a great way to sink into enjoying your body without having to navigate anyone else’s needs.

Bloomin’ Tuesday: Integrating Raw, & Sesame Noodles Recipe

I’ve been aware of the raw food option for years now, but until January, I just didn’t see how it could be a part of my life. I thought it was too intense, too restrictive, and too hard (I was sure of that).

I didn’t realize that I would find it to be delicious, simple, satisfying, and easy to integrate into my life. It also eliminates cravings, and led to my decision to exercise by dancing at Nia classes 5-6x per week.

One of the things that makes it do-able for me: I have the occasional cooked meal. Recently, I was in NYC, and visited my brother, who had some bbq pulled pork going in the crock pot. I dithered, but then realized: this is the perfect time to make an exception. The night before, I had a sensationally good raw dinner at Pure Food and Wine (tamales with mole and a chocolate caramel sea salt tart)

I’m also not making my family join me. They are sharing some food that I make (they especially love the smoothies) and they’re welcome to participate. But I am not making my choice into their lack of a choice.

The resources that have been INVALUABLE so far have been The Juice Lady’s Turbo Diet book, Pura Vida Pantry on Facebook, and RawMom.com. Some seeds that planted interest along the way were the article “Raw Food Supper Club” in Mothering’s issue #160 and eating and LOVING raw pizza, sushi, and pesto-ghetti at Body Cafe in Santa Fe.

Benefits I’ve noticed: more mental clarity, better sleep, glowing skin, more regularity, energy, and feeling less bogged down by the digestion process. I also lost 14 pounds in three weeks (by following The Juice Lady’s Turbo Diet) and have kept it off. What I like about it best: I made one choice, and all I have to do is follow that choice–instead of making fifty choices throughout the day to follow a diet like Weight Watchers. Does that make sense? By making the choice to eat raw, I eliminate the inner debate about whether to have some bread…or dairy cheese…or cake, cookies…they’re not raw. But if I want to have some delicious raw crackers, cookies or nut cheese, I do so, and they deliver their flavor and sensations in a way that harmonizes with my body.

So, I’m not preaching at all…and I hope you cheese lovers out there are not poised to flame me. I would not turn down a cracker with delicious Epoisses cheese at a cocktail party, I assure you. It’s just that in general, I’m eating raw. And it’s really working for me.

One of the things that helped me: I backed into it. I didn’t wake up on January 1, inscribe the New Year’s resolution into my tablet that I WILL EAT RAW! It was just something that started with juicing vegetables and eating salads and chilled raw soups during a cleanse. Then I ran with it–because I was inspired to. It’s been so much fun to make “pasta” out of zucchini and carrots, nori rolls filled with veggie and nut pates and peppers, celery, avocado…

What do you eat that makes you feel your best? What are your favorite raw meals? Salad dressings? Soups? Please share your fave raw blogs, websites and recipes.

Here is my current favorite raw entree recipe.

Raw Sesame Noodles

3 zucchini
1 carrot
1/2 red bell pepper (if you have it)
3 scallions, thinly sliced
3 tablespoons toasted sesame oil
3 tablespoons tamari sauce
1 tablespoon apple cider vinegar (or rice wine vinegar)
1 tablespoon agave nectar
juice from half a lemon
1 1/2 teaspoons grated ginger
1 teaspoon minced garlic
1/8 teaspoon cayenne powder
1 teaspoon sesame seeds
1 tablespoon peanut butter (or more to taste)
¼ cup peanuts, chopped coarsely in food processor

(So good right away and even better the next day)

1. Cut the zucchini, carrot, and pepper in long noodle shapes (use a Spirooli or a mandoline, or even a grater). Mix together the 3 different varieties of “noodles” and scallions in a large bowl.
3. In a small bowl, combine the rest of the ingredients and mix well.
4. Toss the noodles in the sauce.

Whether you’ve always loved Valentine’s Day or feel it’s a faux holiday not worth noticing (my feelings are mixed with a side of hopeless romantic), the fact remains that any excuse to express love to your nearest and dearest is worth running with.

And you don’t have to spend a cent! Laura Egley Taylor’s Mothering blog has been featuring truly lovely Valentines crafts to make with your kiddos, and Scott Noelle (I subscribe to his daily newsletter on parenting) has an easy and inspiring suggestion to pleasantly litter your life with love notes to self.

It’s not easy to grow up in this society with a healthy, unabashed sense of love for oneself intact. Narcissism and arrogance are often mistaken for self-love (the threat of being called same is used as a wedge to keep people disingenously humble), but true self-love does not come from a place of selfishness or pomposity.

My children’s pure love for me has taught me how to see myself in new ways–their love has fostered my own healthy appreciation of myself, with all of my imperfections. That fosters my own ability to give back to them. When children see their parents modeling healthy confidence and self-care, that’s a lifelong gift that informs their relationships and will impact their future parenting someday, too.

How did your parents model self-love or self-disparagement? How did that affect you, as a child? How are you carrying that forward and what would you like to improve/share with other parents? When do you notice contentment with yourself?
